Seafood Chowder
Ingredients:
1 cup chopped onion
2-3 cups chopped celery
3 tbsp butter
1/2 cup butter
3/4 cup flour
5 cups milk/blend
1/4 tsp pepper
1 tsp salt
1 lb Velveeta cheese
10 oz lobster
1 lb shrimp
1 lb scallops
(substitute or add any other seafood like mussels, haddock, salmon, etc)
1 bottle dry white wine
Pour glass of wine. Taste to ensure dryness. Set bottle aside.
Saute onions and celery in 3 tbsp butter. Set aside.
Stir flour into 1/2 c. melted butter. Cook over low heat on stove, stirring constantly, for about 3 minutes.
Add 5 c milk gradually, stirring constantly.
Add 1 lb cut up Velveeta cheese. Heat on low, stir between sips of wine until cheese melted.
Add 1 tsp salt and 1/4 tsp pepper.
Pour another glass of wine. Set bottle aside.
Add pre-cooked seafood (scallops should be only partially pre-cooked). Heat thoroughly.
Eat chowder and drink remainder of wine.
